It is considered the spelt par excellence and as the name suggests, its ears usually contain two grains. The spelt plant has a remarkable capacity for adaptation and resistance: it adapts easily to poor and hilly soils, it does not suffer from the cold and resists humidity excesses well. It does not have particular fertilization and weeding requirements and, therefore, adheres perfectly to an organic cultivation regime.

Nutritional properties
Among the most important and beneficial substances contained in spelt are fibres, B vitamins and numerous minerals, including sodium, calcium and magnesium. Group B vitamins play a decisive role in the metabolism of carbohydrates, lipids and proteins, while a diet rich in insoluble fibers promotes and stimulates digestive processes and is highly effective against the formation of acids and gallstones. Another important feature of fibers is that they are able to avoid glycemic swings in diabetic subjects, and for this very reason specialists recommend including spelled in their diet. Moreover, due to the very low calorie intake and thanks to the fact that it promotes a rapid sense of satiety, this cereal is also highly recommended for those who want to lose weight. Spelled has a high content of selenium and phytic acid, very important elements for preventing aging of the skin and cells, even the most serious degeneration that causes some tumors (for example colon, breast and prostate).

Rustic Dicoccum Spelt

Ingredients for 4 people

Method

  • 350 g pearl spelt
  • 1 onion
  • 1 carrot
  • 1 stick of celery
  • 1 tablespoon of turmeric
  • 1 egg yolk
  • 1 sprig of rosemary
  • 1 clove of garlic
  • Extra virgin olive oil q.b.
  • Vegetable broth or water to taste
  • Grated parmesan to taste
  • Salt and pepper to taste

Finely chop the vegetables and let them dry over a low heat in a saucepan with two tablespoons of oil. Add the pearled spelled and let it infuse. 

Cover with plenty of vegetable broth or boiling water, for about double the volume of the spelled. Salt. Also add a clove of unpeeled garlic and fresh peeled rosemary.

Bring to the boil by cooking for about 25/30 minutes and adding more broth if necessary. Once ready, turn off the heat and add the turmeric and raw yolk.

Mix well and put back on the heat for a few minutes. Serve wavy with freshly ground pepper and grated Parmesan. 

If you like it, rustic spelled can also be enjoyed in soup, keeping the preparation more liquid.
